Tater Tot Casserole

There are so many recipes out there for tater tot casseroles. Here is one that I'd like to share with you. It tastes so good!


 
1 lb ground beef
1/2 onion
1- (32 oz) bag of frozen Tater Tots
1-(16oz) container of Sour Cream
1- (10 3/4 oz) can of Cream of Mushroom Soup
1 cup Shredded Cheddar Cheese
1 (6oz) can of French-Fried Onions

Preheat oven to 350°F. Brown the ground beef and 1/2 onion in a skillet and set aside to cool. In a small mixing bowl, stir together the Sour Cream, Cream of Mushroom Soup, and Cheese. Arrange the Tater Tots in a 9x13 greased baking dish. Add the beef with onions on top of the Tater Tots. Spoon on Sour Cream mixture and spread evenly. Top with the French-Fried Onions. Bake for 45-60 minutes. Enjoy.

Peppermint Hot Chocolate



It is starting to get colder here and I have been wanting some good peppermint hot chocolate. Here is a recipe that I found that is easy to make.

Peppermint Hot Chocolate:
1 1/2 cups powdered sugar
1 1/2 cups powdered coffee cream (any kind)
1 cup + 2 Tbsp. Cocoa Powder
20 finely crushed peppermint candies

Mix all the ingredients together and store in an airtight container. To make, add 3 tbsp of the mix to a cup of hot water. Add mini marshmallows on top.

I added an extra tbsp of the mix to my cup because I found it to be a little watery. I also added a piece of chocolate to give it an extra chocolaty flavor. If you'd like, add this mix to your coffee in the morning. It tastes so good!!!

Put some mixture in canning jars with the directions, a cute note, and a ribbon for a great Christmas gift!

Peanut Butter Banana Roll-Up

This is a great recipe as a snack for kids. My daughter loves them. It is easy to make in a matter of minutes.

Ingredients:
Small flour tortilla
Peanut Butter (creamy)
Banana
Honey

Directions:
Spread peanut butter on the flour tortilla.


Add slices of bananas.


Drizzle a little bit of honey on top of the bananas.


Roll the tortilla up like a burrito and grill it on a kitchen griddle or in a pan on the stove.

Marshmallow Sweet Potatoes

I have been looking for a way to cook some canned sweet potatoes I just had sitting in my pantry. I found this great recipe that I have to share. It is super easy to make and tastes so good!



Ingredients:
2 - 15oz cans of sweet potatoes, drained
1 egg
1/3 cup sugar
1/2 tsp cinnamon
1 tsp vanilla extract
2 cups mini marshmallows

Directions:
Heat the oven to 350 degrees. In a bowl, combine the sweet potatoes, egg, sugar, cinnamon, and vanilla extract in a bowl and mix with an electric mixer on medium speed until creamy. Empty the sweet potato mixture into a 2-quart ungreased baking dish. Bake uncovered for 25 minutes. Top with the mini marshmallows and bake for an additional 5 minutes.
Serves 4-6.

This will also make a great side dish for Thanksgiving dinner.
